月饼DIY中秋制月饼月饼制作方法

　中秋的脚步越来越近，虽然市场上的月饼、灯笼琳琅满目，但总不及自己动手做“心意月饼”“心意灯笼”更让人心动。国家烘焙食品评委张雪清告诉记者，其实，月饼DIY并不难。只要稍稍用心，做成的月饼无论送给老爸老妈，还是亲朋好友，都会特别有意义。如果是三五好友一起做月饼，也是很有情趣的。而且不管家里有没有烤箱，一样可以自制月饼。

　月饼DIY

　冰皮凤梨馅月饼

　材料：冰皮粉1kg、冷开水900g、白油100g、切好的菠萝肉1200g左右、白糖适量（可做100g月饼约30个）。

　做法：

　●步骤一：把菠萝果肉打碎后加入糖和油煮30分钟，待冷却后就制成了凤梨内馅。

　●步骤二：冰皮粉加入冷开水中，用中速搅拌2分钟、再快速搅拌3分钟，搅拌至表面光滑，有弹性。

　●步骤三：100g的白油分3次用慢速搅拌均匀。

　●步骤四：放置于冷藏库中约一小时后分割成几个冰皮粉团。冰皮月饼皮和馅的比例没有广式月饼那么严格，如果喜欢冰皮的口感，可以按照皮和馅4：3的比例来制作月饼，也可以降低冰皮的比例，比如3：4。不过，冰皮如果太薄，一个是不好包，馅容易漏出来，另一个是看上去就能明显看到内部的馅料了，没有那么美观。至于具体的重量，要看模具的规格。如100 g的规格，每块饼皮的重量为60g，而每块馅为40g。

　●步骤五：手上蘸少许熟糯米粉,将冰皮擀成中间厚边缘薄的圆片,包入馅料,揉成圆球状，蘸少许熟糯米粉于圆球外层。

　●步骤六：按入月饼模。模具内也粘些粉，用来防粘方便脱模的。月饼模子可以网购，淘宝上各种形状、各种规格的模具应有尽有。一般用得比较多的是白色塑料的按压式模子。

　●步骤七：弄好造型后需置于冰箱冷藏，冻过后再食用味道更佳。

　特点：虽然冰皮月饼的价格比很多品种的月饼贵，但实际上冰皮月饼DIY非常简单，而且不需要使用烤箱。

　　TIPS：冰皮粉在超市或者淘宝网上均有售；用冰皮粉做成的面团本来就是熟的，所以把馅料包好就可以直接食用；冰皮粉本身含有糖分，所以制作饼皮不需要加糖；馅料可有多种：莲蓉馅、凤梨馅、芋泥馅等。可以自己制作，也可在网上买小包装现成馅料；制作冰皮月饼一定要注意卫生，操作过程中最好戴上卫生手套。

　　豆沙酥皮月饼

　　材料：高筋面粉（金象面粉）150克，低筋面粉（白玉兰面粉）350克，猪油300克，拌匀后待用作酥心；普通面粉500克、猪油125克、清水200克，搅拌后待用作水油皮；红豆240克，细砂糖100克，色拉油3勺（45ml）用作馅料；用鸡蛋调出蛋汁，比例为3个蛋黄1个全蛋，待用（这些材料可做10个月饼）。

　　做法：

　　●步骤一：先做豆沙馅。将红豆加6倍体积水放入高压锅，上气后小火煮60分钟左右，待其自然冷却开盖盛出；

　　●步骤二：加少量水用搅拌机打成蓉，倒入锅中小火炒干到水分快干后加入细砂糖继续炒到均匀；色拉油分3次加入到红豆沙中炒，每加一次待完全吸收油后再加下一次，待完全吸收后盛出。放凉冷藏后使用。

　　●步骤三：把酥心面团分成10份，水油皮面皮团分成10份，用水油皮包上酥心后压成片状待用。

　　●步骤四：把馅料分成10份，捏成小圆饼，裹紧成馅团。将馅团包入擀好的面饼内，揉成面球。

　　●步骤五：把月饼放入烤盘内，用毛刷刷上一层调好的蛋汁，再放入烤箱。烤箱预热温度为200，再放入烤箱烘20分钟左右，中间要取出一次，再刷一遍蛋汁。此款月饼也可以用油镬炸，油温180炸约5分钟便可。

　　特点：酥化、香口，制作简单。而且不用模具，用料比较随意不受限制。

　　TIPS：馅料可有多种选择，如豆沙、莲蓉、芝麻花生、鲜肉馅等，300克，可以买现成，也可以自己做；进烤箱烤的时间应根据月饼的大小控制，也可在烤的过程中打开烤箱看一看，以免烤焦。月饼刚烤好饼皮是比较干硬的，要有1~3天的回油期。一定要彻底晾凉后再密封或装盒。

　蛋黄莲蓉月饼

　材料：面粉200g、转化糖浆140g、花生油60g、碱水1/2小匙；莲子600克，细砂糖240克，色拉油220ml；用鸡蛋调出蛋汁，比例为3个蛋黄1个全蛋，待用；咸蛋黄10个左右（这些材料可做10个月饼）。

　做法：

　●步骤一：将莲子加适量水放入高压锅，上气后小火煮50分钟左右，待其自然冷却开盖捞出莲子沥掉水。

　●步骤二：莲子加少量水用搅拌机打成蓉，倒入锅中小火炒干到水分快干后加入细砂糖继续炒到均匀。色拉油分3次加入到莲蓉中炒，每加一次待完全吸收油后再加下一次，待完全吸收后盛出，放凉冷藏后使用。

　●步骤三：转化糖浆加入花生油、碱水拌匀，再加入面粉切拌均匀，不要画圈搅拌，以防面团出筋。拌匀的面团装保鲜袋中静置至少1小时。

　●步骤四：咸蛋黄在酒里泡十分钟去腥，然后把蛋黄放烤盘中，不用预热烤箱直接烤，烤7分钟。取出待凉。

　●步骤五：根据模具分馅料和饼皮。如果是规格100g一个的月饼，按照广式月饼皮和馅2：8的比例，皮为20g，馅和咸蛋黄共80g。

　●步骤六：馅料分成10块后，分别将蛋黄包入其中再搓圆。将皮按扁，包入馅料，收口完毕后切记检查有没有露馅。然后稍微团成椭圆，放入模子中（模子用之前可以涂一层油）。然后把模子摁在烤盘锡纸上，左手用力往下摁，右手按压手柄。

　●步骤七：放入烤箱约5分钟定型，烤箱温度为200，然后取出稍凉刷蛋汁， 再以180烤15分钟即可。

　TIPS：馅料可有多种，最经典是莲蓉蛋黄，比较大众的豆沙、枣泥、栗蓉、伍仁，还有近年来流行的水果馅。可自己制作，也可买小包装现成的；饼皮和馅料的具体分量要视乎各自的饼模大小而定；皮馅分称后，不要长时间暴露在空气中以防干裂；刷蛋汁要轻轻刷过月饼表面的花纹即可，不可刷多；月饼刚烤好饼皮是比较干硬的，要有1-3天的回油期。一定要彻底晾凉后再密封或装盒。

　伍仁月饼

　伍仁月饼的做法跟蛋黄莲蓉月饼一样，只是将蛋黄莲蓉馅料换成伍仁。

　材料：伍仁馅料包括杏仁60克、核桃60克、腰果60克、瓜子仁60克、葡萄干15克、白芝麻（炒香）45克、广式腊肠150克、糕粉（炒熟的糯米粉）150克、白糖150克、油60ml、水110ml。

　做法：

　●步骤一：将杏仁、核桃、腰果、瓜子仁、葡萄干用搅拌机打碎，加入蒸熟切碎的广式腊肠，再加入糕粉、水、油拌匀，再加入适量五香粉和盐调味就是伍仁馅了。

　●步骤二：饼皮步骤同蛋黄莲蓉月饼的做法。

　●步骤三：按广式月饼皮和馅2：8的比例，皮为20g，伍仁馅为80g。将饼皮和馅料按照这个重量分成若干份，剩下的步骤与蛋黄莲蓉月饼的相同。

　冷藏几小时，就可以吃了。很清爽、很甜美的一款自制冰皮月饼。?
